Elegant Craft Wines
We are looking to create immensely palatable and complex wines that will honorably represent the ancient wine terroir of the Samarian Hills.
The grapes are harvested by hand starting before sunrise and crushed immediately to ensure the best and fresh quality produce.
Every year we decide, by the characteristics of the grapes, either to blend them or to keep them separate as varietal wine.
The wine ferments on its skin for about 3 weeks before we use the free run juice for the wine, and sometimes only lightly pressing in order to keep only the best of the wine, without the bitterness of the must.
All of the wines are aged in French oak barrels, for between 9 and 12 months. Only between 1 and 3 barrels each of each variety are made, so that we can give personal attention to each of them.
